This may have been completely obvious to others...

I just built a box of Panthers from Plastic Soldier and was getting ready to chuck the leftovers in the trash when I realized the extra hulls would be great for testing paint & camo schemes. Sure - plastic card can do the trick, but seeing how the scheme looks on the slopes and little nooks really does wonders. This might also be a good way to test your washes and pigments.

I'd be tempted to kit bash them into scenery, burnt out tanks and wrecks add quite a lot to the look of things...

Sherman hulls make good dug in markers, also been used to make SF tanks with the spare tiger tracks. FOW objective, sunk Sherman in treacle, and Tiger 1 in a pond with ice around it.

I just watched a series of videos about an Operation Market Garden mega game (I think they said the table is 60 foot long).

Here is part 1 for anyone interested:

In about the 3rd or 4th part, they had a German "repair depot". I could imagine using a lot of the extra bitz to do one of these, maybe as an objective.
